Peanut Oatmeal Raisin Cookies
So I went a little crazy this morning before work and baked some cookies. Some AMAZING cookies. I took a basic Oatmeal Raisin Cookie recipe and added my own little take:
1 stick butter
2/3 cup light brown sugar
1 egg
1/2 teaspoon vanilla
3/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup rolled oats
1 cup raisins
2 tablespoons crunchy peanut butter

Chipotle Chicken Enchiladas
So I made this great take on chicken enchiladas last night for dinner. I think they were well received and I was able to do some enchilada education. Yes, there are two of them on the plate.
Here is how it breaks down:
2-4 chicken breasts (about 1 breast per person)
3 cups chicken broth
1/4 bag of fajita seasoning (or any Mexican seasoning)
1/4 onion, diced

Black Bean Burger
Here’s the idea:
Take half a can of black beans and half a can of pinto beans, rinse and mash together. Mix in about 2 tablespoons of salsa. Finely chop 1/4 of a pepper and add. Add about 1/4 cup of bread crumbs to help bind.
Cook on grill or pan about 3 minutes per side, until warm inside.
Eat on bun with salsa as a garnish.

Yes, it has come to this - I am picking out strollers and what not for a baby I will most likely never have. But just in case I want to be prepared. Plus this is just too perfect.
