Peanut Oatmeal Raisin Cookies
So I went a little crazy this morning before work and baked some cookies. Some AMAZING cookies. I took a basic Oatmeal Raisin Cookie recipe and added my own little take:
1 stick butter
2/3 cup light brown sugar
1 egg
1/2 teaspoon vanilla
3/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup rolled oats
1 cup raisins
2 tablespoons crunchy peanut butter
I’m rather unconventional so I throw all the ingredients besides the peanut butter into a bowl and mix it by hand. That’s right - no creaming butter first. And when I say by hand, I mean I actually use my hands (kids usually like that part).
After the dough is throughly mixed, add the peanut butter.
Heat oven to 350 degrees and cook for about 11 minutes, I make 9 medium sized cookies per pan. Let rest on pan for 2 minutes. Enjoy warm!
